Making Chicken Dum Biryani Under 60 Minutes

Chicken Dum Biryani with Raita



Ingredients: 

1/2 KG Chicken 
5 stems of Coriander
5 stems of Mint leaves
2 tsp Ginger-Garlic paste 
1 Large Onion sliced and fried
2 Cups of Basmathi Rice 
1 Bay Leaf
5 cloves
5 cardamoms 
1 Cinnamon stick 
1/4 tsp Red Chili powder
1/4 tsp Turmeric powder
1/4 tsp Pepper Corn
1/4 tsp Shahi jeera
1 tsp Milk (5 saffron stands soaked)
3 tbsp oil
1/2 cup Curd 
salt to taste

Preparation :
  1. Wash rice and soak it for 20 minutes.  
  2. Wash chicken and drain off the water and marinate in a heavy bottom pan with salt, turmeric powder, chili powder and ginger-garlic paste for 15 minutes.
  3. Then add Curd, Pepper corn, 5 Cloves, 5 Cardamoms , 1 Cinnamon stick , oil ,  fried Onions, stems of Coriander and mint leaves chopped to the marinated chicken and keep it aside.
Cooking: 

  1. Bring 4 cups of water to boil and add soaked Basmathi rice, Shahi Jeera, 1 Bay leaf, salt.
  2. When rice is cooked 70 %, drain off the excess water and add the rice to the marinated chicken. 
  3. Drizzle saffron soaked milk over the rice and cover the pot with a tight lid.
  4. Place the pot on a hot tawa and dum it for about 15 minutes.
  5. Switch off the stove.
  6. Serve Chicken Dum Biryani with onion Raita and a Salan.
